Specializing in food and drink
of the Early West, The Fort serves the finest bison, beef, elk,
quail, seafood, and vegetarian fare. The Fort won the Award of
Excellence by Wine Spectator for the fourth consecutive year in
2007, was named a “Must See” in The Rocky Mountain
News’ 2007 Dining Guide, “Top of the Town: Classic
Denver Restaurant” by 5280 Magazine in 2006, and
is listed on the National Register of Historic Places.
First Course (choice of)
The Fort’s Dinner Salad - a mix of seven crisp greens topped with
pickled ginger, diced jicama, toasted pepitas, and a peppadew
pepper. Served with freshly baked pumpkin walnut muffins and sour
dough rolls topped with Sam’s Traveling Spice.
Second Course
A savory bison filet brochette and The Fort’s famous teriyaki
marinated quail, served with white cheddar mashed potatoes and
Chef’s choice of fresh seasonal vegetables.
Third Course (choice of)
Fire Roasted Apple Cherry Cobbler topped with an oatmeal streusel served hot with Vanilla ice cream and a lime-caramel sauce.
