It should be no surprise that a restaurant as unique as Hacienda Colorado® has a style of cuisine unlike any other. In fact, we had to invent a new term for it — “Mountain Mex®.” We've taken traditional Mexican recipes and updated them with a distinct Rocky Mountain twist.

Second CourseChoose one per person: Ed's Chipotle Lime Chicken - Lime-marinated chicken breast served on a bed of chipotle rice, black beans, Colorado sauce and a stacked cheese enchilada. Topped with pico de gallo and our fresh lime cream sauce. Poblano de Pollo - A fresh poblano pepper, flame-roasted and stuffed with grilled chicken breast, roasted tomatillo relish and Monterey Jack cheese. Served with a spicy chile relleno, rice and frijoles a la Hacienda. Enchamoles con Camarones - Two guacamole enchiladas smothered in a shrimp cream sauce with roasted poblano and bell peppers, corn and mushrooms. Topped with cheese and three jumbo shrimp. Served with rice and frijoles a la Hacienda. Fish Tacos - Three corn tortillas stuffed with grilled mahi-mahi, chipotle aioli sauce and roasted poblano peppers. Topped with our pico de gallo, lime marinated cabbage, chipotle onions and a fresh lime cream sauce. Served with black beans. Third CourseChoose one per person: Empanada - Rich pastry filled with banana, honey, pecans, cinnamon and Frangelico cream sauce. Served with cinnamon ice cream.
