First Course (choice of)
• Crispy and Grilled Calamari - romesco sauce and lemon caper aioli
• Stuffed bell pepper - Chorizo, Yukon gold potatoes, onion and roasted garlic
• Minestrone soup or Butternut squash soup
• Mixed green salad - butternut squash, spiced almonds, goat cheese and cherry balsamic vinaigrette

Second Course (choice of)
• Colorado Filet Mignon - crab and pancetta twice baked potato
• Herb stuffed Chicken Breast - ricotta cheese, spinach, risotto and pomegranate jus

• Gemelli pasta - pancetta, caramelized onion, smoked mozzarella and light tomato sauce
