Arugula Bar e Ristorante is the realization of our dream to create a simple, natural, and pleasurable dining experience in Boulder. Arugula is elegant Italian dining with the warmth of home in a modern environment, infusing the best of Italian culinary tradition with our contemporary interpretations. We pride ourselves on using ingredients grown based on traditional practices, helping to remind us of our connection to the land and the seasons. We create balanced meals using meats that are naturally raised, in-season organic local produce, and fish and shellfish which is in accordance with Monterey Bay Aquarium Seafood Watch guidelines for sustainability. First Course

  • Tomato-fennel bisque with Grana Padano and balsamic VEGETARIAN & GLUTEN FREE
  • White bean soup with local ham hock, parmesan brodo, farro, carrots and potatoes
  • Lettuces, cherry tomatoes, caramelized onions and basil in balsamic vinaigrette VEGAN & GLUTEN FREE
  • Arugula, fennel and dried fruits in cranberry vinaigrette with goat cheese VEGETARIAN & GLUTEN FREE
  • Lettuces in Sherry vinaigrette with local beets, snap peas, almonds and feta cheese GLUTEN FREE
  • Mozzarella with balsamic and basil marinated cherry tomatoes, arugula, sea salt and toast (+$2) VEGETARIAN
  • Hazel Dell mushrooms with Gorgonzola cheese VEGETARIAN & GLUTEN FREE
  • Carpaccio of boiled sushi grade octopus with lemon olive oil and oregano (+$2) DAIRY & GLUTEN FREE
  • Long Farm local pork and duck country pâté with figs and pistachios; with handmade crackers (+$2)
  • Prosciutto with fig mostarda and arugula

Primi Sized Pasta/Gnocchi/Risotto:
  • Penne pasta with roasted winter squashes, apples, fresh rosemary, honey, walnuts and Val d'Aosta cheese VEGETARIAN
  • Handmade potato gnocchi with pears, parsley, almonds, Gorgonzola cheese and a touch of cream VEGETARIAN
  • Carnaroli rice risotto with local Hazel Dell mushrooms, chard, herbs and Grana Padano cheese VEGETARIAN & GLUTEN FREE
  • Olive oil poached wild shrimp with garlic, roasted tomatoes, lemon zest, fennel, braising greens and orecchiette pasta (+$2) DAIRY FREE
  • Penne pasta with fennel sausage, caramelized onions, roasted tomatoes, fresh oregano and goat cheese
  • Bolognese sauce with local Bison, broccolini, sweet peppers, Gran Padano cheese and orecchiette pasta
