Mollusks - Pork Sausage, Potatoes, Spring Onion
Scallop Crudo - Cucumber, Cabbage, Apples
Lemon and Herb Halibut - black rice, carrot sauce, spring veggies
Seaweed and Chocolate - Honey, crunch

For me the spring is a time a budding new possibilities, warmer weather, fresh vegetables, longer days and really my first cravings of the year for seafood. There is something about the warmer weather that draws my taste buds towards the sea and what better way to accommodate that than with some fresh spring vegetables, a light and savory combination giving you a glimpse of what is to come in the following months
