Root Down, Linger and El Five are teaming up to offer the ultimate comfort food menu. They have sourced Barber’s all-natural turkeys that arrive fresh (never frozen) and are prepared thusly: the legs are salt and sugar-cured and sous-vide with duck fat and herbs for 16 hours at 168°F and the breasts are brined, then roasted and basted with an herb compound butter. Their cornbread stuffing is unique, made from Spanish chorizo, Honeycrisp apples, chestnuts and roasted shiitake mushrooms. Holiday pies are also available. Buy three pies and receive a copy of their cookbook, “The Edible Beat.”
