Wagyu Steak Experience

The dinner features dry-aged A5 Wagyu Beef from Japan that has been aged an additional 45 days at Sullivan Scrap Kitchen. Exquisitely marbled, the Wagyu breeds are legendary and the A5 grading is considered rare and the world’s best cut of beef. This multi-course dinner will begin with small bites crafted by the chef along with house-made sourdough and whipped culture butter. The meal will commence with a Colorado Caesar salad with herbed yogurt, smoked trout, pumpkin seeds and aged goat cheese followed by the main event: Wagyu beef.

The dish features an A5 Wagyu Ribeye with smoked potato purée, grilled vegetables and demi-glace. For dessert, a duo of vanilla strawberry and honey lavender crème brûlées. To make the evening more special, the steak has an optional wine pairing per course. The experience is $200 per person with an additional $50 for the wine pairing.
