Bistro Colorado (BICO) Restaurant and Wine Bar is a farm to table chef driven concept where the cuisine is inspired by sustainable and locally procured ingredients when available and classical, time proven culinary technique. Our full service restaurant is complete with a full bar including spirits, wines, and craft beers. Our menu changes seasonally. We focus on fresh, vibrant dishes in the spring and summer and more hearty fare during the fall and winter months. We feature all natural whole food plant based and allergen friendly options. No matter the season our food is presented elegantly and artistically and in a very clean and well-maintained culinary environment. The plate is our palette and sauces, purees, and other food mediums our paint. We combine art with science and nature to present food that is always healthy and well prepared and served at the peak of freshness.
