Blackbelly was founded by award-winning Chef Hosea Rosenberg in 2011 as a high-end boutique catering and event company, with a food truck and farm. It has since evolved to include an acclaimed full-service dinner restaurant, breakfast and lunch café, and Boulder, Colorado’s only independent butcher shop licensed to make and sell house-cured meats. Through its evolution, the mission at Blackbelly has remained that: food will always start with seasonal, locally-grown ingredients, and pasture raised sustainable animals.

  • Description The Butcher Shop operates as a public market during daytime hours. In the evening it's the perfect space for meetings, holiday parties and private dinners. The space can accommodate up to 32 seated, or up to 50 for a cocktail party. The main dining room is available for private breakfasts and lunches, as well as full dinner buy outs. Our private, all season patio is available for private parties day or night, rain or shine. It can seat up to 35 guests on picnic seating at our custom wood tables. Pair it with the Butcher Shop or restaurant and provide your guests with a larger space to celebrate in.
