Blackbelly was founded by award-winning Chef Hosea Rosenberg in 2011 as a high-end boutique catering and events company, with a food truck and a farm. It has since evolved to include an acclaimed full-service dinner restaurant, breakfast, lunch, and Boulder, Colorado's only independent butcher shop licensed to make and sell house-cured meats. No matter where you experience Blackbelly, your food will always start with fresh, locally grown ingredients, and pasture raised, sustainable meats.

  • Description The Butcher Shop operates as a public market during daytime hours. In the evening it's the perfect space for meetings, holiday parties and private dinners. The space can accommodate up to 32 seated, or up to 50 for a cocktail party. The main dining room is available for private breakfasts and lunches, as well as full dinner buy outs. Our private, all season patio is available for private parties day or night, rain or shine. It can seat up to 35 guests on picnic seating at our custom wood tables. Pair it with the Butcher Shop or restaurant and provide your guests with a larger space to celebrate in.
