ChoLon translates to “big market” in Vietnamese and is named after the largest Chinese-influenced market in Saigon. Fittingly, it also includes Chef Lon Symensma’s name, who opened ChoLon in Downtown Denver in 2010, following his extensive culinary travels throughout Asia.
After many years of evolution – including eight years on the 5280 Top 25 Restaurants List and being named a James Beard finalist for Best New Restaurant in America – Symensma and business partner Christopher Davis-Massey opened a second ChoLon location in Stapleton.
At the helm of the new concept is Executive Chef Becca Henry, who started as a line cook at ChoLon’s downtown location in 2012 and spent years learning every detail of every station. She assumed the role of Executive Chef in 2019. Before opening in Stapleton, Chef Lon, Chef Becca and the ChoLon team traveled to Southeast Asia for a whirlwind Research & Development trip. Over three weeks, they visited four countries, tasted countless dishes, and came back to the states with a fresh take on Southeast Asian cuisine, much of which you’ll find on the menu at ChoLon Stapleton.
Also joining the team is Chef Michelle Xiao, who was a dim sum chef at Buddakan when Lon served as Executive Chef. Xiao has over thirty years of dim sum experience and moved to Denver from New York City in 2019. You’ll find her behind the dim sum counter as soon as you walk into ChoLon Stapleton, showcasing her unique skills in the form of delicate dumplings.
