Working in Michelin-starred restaurants and soaking up knowledge from chefs and locals in France, Italy and Spain completely transformed Lon Symensma’s life as a young chef. This is why, when presented the opportunity to open a restaurant next to ChoLon in 2019, he chose to honor his culinary beginnings with an ode to one of his mentors, Chef LeRoux, and one of his earliest passions, European cuisine.
