At our table, visitors will savor the finest house-made pastas, Italian breads, mozzarella, charcuterie meats and gelato. Liberati Osteria & Oenobeers offers a true taste of Italy right here in a historic Denver neighborhood in a welcoming space with detailed design features like Italian marble, hand-painted murals, gleaming stainless steel serving tanks and an outdoor patio. Guests will discover the only brewery in the world devoted to the exploration of Oenobeers - a beer/wine hybrid with each beer using a different wine grape in its fermentation - presenting a whole new range of flavors, textures and taste for guests to explore. Besides Oenobeers, we offer classic Italian cocktails alongside a full wine list.

1. Tris di Supplí
One of each of these gorgeous, golden bites of crispy risotto balls made with typical sauces from Lazio and Castelli Romani: Amatriciana - San Marzano tomato sauce, DOP Pecorino cheese and house-made Guanciale. Carbonara - DOP Pecorino cheese, cage-free eggs and house-made Guanciale. Cacio e Pepe - DOP Pecorino cheese and black pepper.

2. Scagliozzi di Foggia
Fried pieces of polenta with sautéed porcini mushrooms, drizzled with a scratch-made light cream sauce using aromatic DOP Taleggio cheese from the valley of the same name near Bergamo in northern Italy.

Primo Piatto

Choice of one:

1. Gnocchi Pisarei
Handmade gnocchi using the bread we bake here in-house. This ancient recipe derives from the farmlands around Piacenza, in the Emilia-Romagna region. The house-made sauce is a mix of the salsiccia we make here, white cannellini beans and tomatoes from San Marzano, Italy, generously dusted with 24-month Parmigiano Reggiano cheese.

2. Ravioli del Campidano
Ravioli filled with ricotta made to our exact specifications with Spanish saffron laid upon a light tomato sauce with black-crusted Pecorino Romano cheese and house-made 24-hour dehydrated lemon powder.

Secondo Piatto

Choice of one:

1. Salsicce al Sugo
Roman-style sausages made in-house exactly as you would find them in the most traditional Roman taverns, braised in a 4-hour tomato sauce using tomatoes from San Marzano in Campania, served with a touch of grated 24-month Parmigiano Reggiano cheese, basil and our Roman Pane Casereccio bread.

2. Genovese di Agnello
A slowly stewed Superior Farms Colorado lamb with onions in the style of the seafarers of Naples with house-made Pinzimonio marinade consisting of carrots and celery marinated for 24 hours in white wine vinegar.

3. Rana Pescatrice
Monkfish encrusted with Pecorino Romano cheese and finely chopped sage served on a bed of creamed leeks and potatoes, with sautéed fava beans and house-made Guanciale. This dish is a nod to the ancient Roman tradition of eating fava beans with Pecorino Romano cheese to celebrate the coming of Spring.

Our Oenobeers (craft beer fermented with wine grapes) pair perfectly with our Italian cuisine. We suggest pairing your courses with these Oenobeers, but please feel free to enjoy the beverage of your choice.

Antipasto Course: Parvus Titan - A petite mineral Oenobeer with the beloved noble East Kent Golding hops and 20% Viognier grapes. 3.7%abv. 35cl (11.8oz) pour - $7

Primo Piatto Course: In Medio Stat Virtus - The 48% addition of Chardonnay grapes creates a vinous and flinty profile. 8.4%abv. 25cl (8.5oz) pour - $10

Secondo Piatto Course: Lupulus Vinifera - The clean 20% of Pinot Grigio grapes compliments the classic Cascade and Centennial hop combination. 6.7%abv. 25cl (8.5oz) pour - $10
